Critical violations are defined as items relating directly to factors that lead to food-borne illness and must be corrected immediately. Noncritical violations are defined as items that relate to maintenance of food operations and cleanliness.

White rice was at 46 degrees in cold holding. Some food items in the walk-in were held past discard date or did not have a proper date marking.

Noncritical violations: Bulk food containers did not have labels. Bulk containers of ingredients such as sugar and seasoning did not have lids. Preparation table in the food preparation area needs cleaning. Shelves in the storage area, food preparation area and walk-in cooler need cleaning; external surfaces of bulk food containers need cleaning.
