It’s said that some people have to kiss a lot of frogs. If so, there certainly is a wide variety of the creatures to choose from, as the episode “Fabulous Frogs” underscore­s. Sir David Attenborou­gh surveys the difference­s, from physiology to behavioral traits. One of the variations is the wood frog, which can survive freezing winters — and which is under considerat­ion to become New York’s official state amphibian.

7 p.m. on MasterChef

Things get downright crabby in the new episode “Gordon Ramsay’s Masterclas­s,” as the amateur chefs deal with ... well, guess which kind of seafood? Ramsay shows them how to prepare it, as a warmup to using it in his Crab Benedict recipe. He’s bound to be a harsh judge of the results, which Joe Bastianich and Aaron Sanchez also gauge. Not everyone who starts the hour will be there at the end.

8 p.m. on Gordon Ramsay’s 24 Hours to Hell and Back

If anyone currently on broadcast television is a master of variations on a theme, it has to be “Hell’s Kitchen” and “MasterChef” veteran Ramsay. He has something new cooking with the premiere of this series, in which he travels across America to troubled restaurant­s that may have to shut down unless he can upgrade them successful­ly, literally within 24 hours. He utilizes a mobile kitchen that makes its first stop at the Congers, N.Y., restaurant that gives this episode the title “Bella Gianna’s.”

9 p.m. on CNBC The Deed

Self-made real-estate mogul Sidney Torres returns for a second season of rescuing struggling property owners in exchange for a piece of the property and a percentage of profits from any sale. These funds are used by the developers to restore dilapidate­d homes to their former glory, with Torres’ expertise gleaned from his own years of experience, plus his natural design savvy. This season’s partners include two recovering addicts seeking to make a fresh start and an ambitious law student.

9 p.m. on Travel Channel Caribbean Pirate Treasure

Underwater explorer Philippe Cousteau, grandson of celebrated oceanograp­her Jacques Cousteau, and Philippe’s journalist wife, Ashlan, return for another season of pirate-themed adventures, which premieres tonight with two new back-to-back episodes. In the season opener, the couple brave angry seas and contempora­ry pirates to delve into the story of ruthless buccaneer Bartholome­w Sharp.
