Restaurant inspections

Critical violations are those factors leading to foodborne illness and must be corrected immediately. Noncritical violations relate to maintenance of food operations and cleanliness.

Oct. 5

Sweet Stir

2420 U.S. 412 East, Siloam Springs Critical violations: Employee did not wash hands when coming back into the unit prior to returning to beverage prep. Employee did not wash hands after handling money prior to preparing drinks. Milk in the reach-in cooler is at 45 degrees and half-and-half oat milk in the refrigerator is at 50 degrees. Repeat violation.

Noncritical violations: Wet wiping cloth is being stored on the countertop. Employee not wearing a mask when coming in contact with customers.

387 S. Main St., Cave Springs Critical violations: Employee washed baking trays but did not know about the sanitize step. Hot dog at 98 degrees and not marked with a time. Open packages of hot dogs and sausage on a stick in the walk-in cooler are not date-marked. Deli Express items in the refrigerator are not date-marked as needed. Noncritical violations: Employee did not know where the test strips for checking sanitizer concentration are. Not found during the inspection.

Food employee battered (contains raw shell eggs), rinsed gloved hands in the washing sink then handled cooked dumplings. Another food employee donning disposable gloves cracked raw shell eggs, then touched clean plates and cooked food without removing the gloves and handwashing. A container of sushi rice in the front sushi area and a container of steamed rice for frying in the back food preparation area lack discard time-marking.
