“Peo­ple don’t think of us as a bar,” says chef-part­ner of Ari­ete Michael Bel­tran. Of course that’ll change as soon as you try the cock­tail float: two scoops of house-made vanilla ice cream spiked with Fer­net, luxardo, and (al­co­holic) root beer, dubbed Not Your Fa­ther’s Root Beer. It’s one of sev­eral happy hour and new cock­tail of­fer­ings that also in­clude mez­cal ne­gro­nis, tobacco-steeped old-fash­ioneds, and cachaça mules. Plus, oys­ters, fritas, chug burg­ers, and wood-grilled fish-sauce caramel wings with fu­rikake ranch.
