Celebrate National Guacamole Day

“So, do we want a recipe?” I asked my editor. We were discussing coverage for National Guacamole Day (Sept. 16). “I included one in that CBD article not that long ago, so … ”

I think she heard both sentences, but I’m not entirely sure. Because the first one seemed to trigger a memory.

“You know, I’d really like Black Rooster Taqueria’s recipe … ” she said.

She is hardly alone. It’s the second most-asked question at this popular Mills 50 taqueria, says owner Juliana Calloway. “The only other one people ask more is, ‘Why did you name it Black Rooster?’ [it’s a cute childhood story of Calloway’s husband and partner, John] But then it’s straight to the guacamole.”

Why?

Well, for starters, staffers at

Black Rooster go through an avocado shipment — always Mexican, always Hass — every single morning.

They also make the chips in house, which isn’t uncommon, but Calloway thinks their practice of hitting them just out of the fryer with a mix of both kosher and sea salt is a secret to the combo’s popularity.

“Guac and chips sell more than anything,” she says. “I think it’s one of the things we’re most known for, and it really deserves its own holiday. … If you’re starting your meal with guacamole, you know it’s going to be a fun night. You sort of associate it with being outside, having a drink and an awareness that there’s really good food coming after. It’s very social, and reminds you of being around a table with friends and family. It’s a feelgood food.”

Indeed, there’s something both wonderfull­y fresh and supremely decadent about guac, a creamy-chunky “salad” of sorts. If a salad were made of fat.

“But it’s the good kind of fat!” Calloway chirps.

Indeed.

And if you’re lucky, you can get it free for a whole year.

One of Black Rooster’s best annual traditions is their National Guacamole Day giveaway and as of right now, it’s on.

Now through Sept. 16, head to Black Rooster Taqueria and grab some guac. Snap a pic, post it on any social media platform and tag #ThatGuacTh­o to enter.

One lucky winner will be announced at the end of the week on National Guacamole Day.

What’s more, all customers who purchase guacamole on the holiday will get a “Next Guac Free” card for their next visit.

The Calloways have done guac classes for Edible Orlando and at the public library in the past. And since, for now, that’s where such group events will stay (and there can only be one contest winner), we’re happy to serve it up for your make-at-home pleasure.
