The cen­ter­piece of Posa’s busy, no-frills Rodeo Road lo­ca­tion is its tamale-making op­er­a­tion, on full dis­play via a pic­ture win­dow. The mouth­wa­ter­ingly ex­ten­sive menu in­cludes all the usual

sus­pects: tamales, ta­cos, bur­ri­tos, en­chi­ladas, posole, menudo, break­fast bur­ri­tos — and a few more. The tamale masa is the star of the show: light, fluffy, and del­i­cately sea­soned, and the plates are rich and gen­er­ous. Some menu items can take

a dive into greasy fast-food ter­ri­tory, but on the whole, this is a Santa Fe institution for good rea­son. Rec­om­mended: pork and red chile tamale, ve­gan

tamale, cal­abac­i­tas bur­rito, and em­panada.
