The centerpiece of Posa’s busy, no-frills Rodeo Road location is its tamale-making operation, on full display via a picture window. The mouthwateringly extensive menu includes all the usual

suspects: tamales, tacos, burritos, enchiladas, posole, menudo, breakfast burritos — and a few more. The tamale masa is the star of the show: light, fluffy, and delicately seasoned, and the plates are rich and generous. Some menu items can take

a dive into greasy fast-food territory, but on the whole, this is a Santa Fe institution for good reason. Recommended: pork and red chile tamale, vegan

tamale, calabacitas burrito, and empanada.
