Situated in the heart of historic downtown Phoenixvil­le sits Taste, Sand Castle Winery’s new, highly stylized vegan restaurant designed by famed NYC designer Dean Arcuri. Leap years away from heaping platefuls of raw kale and grilled portabello­s, Taste uses gourmet products from Herbivorou­s Butcher—the world’s first meatless, plant-protein-based butcher— and chef Theo Charitos’ plates are decidedly of the this-tastes-just-like-kobe variety. “We sought to form a concept that provides a savory, gourmet menu which satisfies both the die-hard and reluctant vegan,” says managing partner Chad Sletten. Standout dishes include a blackened rib-eye with crispy potatoes and bourbon ketjap, and Portuguese chicken and sausage with black bean cake and braised baby kale.
