Pickled Tartar Sauce

Serves 1 cup mayonnaise 1 tablespoon finely chopped pickled jalapeno

1 tablespoon minced shallots

1 tablespoon chopped dill pickles

Freshly ground black pepper to taste finely

Corn-Black Bean Salad

1 cup black beans (from can, drained) 1 cup corn kernels 1 cup red peppers, finely diced ½ cup onion, finely diced ½ teaspoon ground cumin ¼ cup cilantro, chopped 4 tablespoon­s lime juice Salt and freshly ground black pepper to taste

Combine all ingredient­s well. Cover and refrigerat­e.
