Heritage Craft Butchers opening a second store in Waynesburg

Heritage Craft Butchers — an uncommon food purveyor that opened earlier this year in the out- of- the- way location of Marianna, Washington County — is opening a second store in a more populated spot: Waynesburg.

The new store, in the Greene County seat, opens Friday and will offer staple items — sausages and other meats, milk, eggs — all locally sourced and housemade, or from a local vendor.

“Our product line will grow over time,” the business announced in a Facebook post. “You are still welcome to visit our main shop in Marianna for a more varied and esoteric selection.”

That shop, in an old bank, opened in January and quickly became a destinatio­n for people from Pittsburgh and beyond seeking house- cured charcuteri­e, specialty cuts of heritage breed meats, foraged wild mushrooms and other special foods. It also offers regular butchery clinics, “Forage & Feast” field trips, group dinners on and around its antique Butchers Table, and off- site events. It’s open 11 a. m.- 7 p. m. Thurs.- Sun.

The new store, in a rented building at 1462 E. High St. in Waynesburg — once the Fencerow Farmers Market — is not closer to Pittsburgh, but it’s closer to Interstate 79. It’s open 4 to 8 p. m. on Friday. Regular hours will start out as 4 to 8 p. m. weekdays and 11 a. m. to 7 p. m. Saturdays. “We’ll adjust those hours if customer traffic justifies it.” But Bob Von Scio, who co- owns the business with Wes Cannon and Jared White, expects to be very busy.

“It’s incredible,” Mr. Von Scio says, “hearing how far people go to come to our place.”
