ARTISIAN YOGURT BARK

As with any frozen treat, this yogurt bark will begin to melt after just a few minutes outside the freezer. Consider serving one piece at a time to maintain the ideal consistenc­y. ½ cup banana, pureed 1 cup plain Greek yogurt Thinly-sliced fruits like berries, grapes, dates etc.

Nuts of your choice, finely chopped or sliced

Chia or flax seeds

½ cup mixed frozen berries

Honey, optional Confection­ary adornments such as sprinkles or edible glitter, as desired

Fold banana into Greek yogurt.

Place a silicone baking mat on a cookie sheet. Turn out yogurt-fruit mixture onto silicone mat and spread into desired shape while maintainin­g a consistent ¼to ½-inch thickness using an offset spatula. Arrange chosen toppings (fruit slices, nuts, seeds) on the yogurt to create images or patterns as desired. Using a fingertip or edge of a spatula, slightly depress the toppings into the yogurt.

Freeze yogurt creation for 1 hour uncovered.

Meanwhile, puree frozen berries and refrigerat­e.

Remove yogurt creation and pureed berries. Using a silicone brush, paint or drizzle fruit puree onto yogurt.

Drizzle with honey, if using, in desired pattern and add final adornments, if desired.

Fruit puree should freeze to yogurt almost instantly. It not, freeze for another 20 minutes or until set.

Once set, use a meat tenderizer (or other clean, heavy kitchen utensil) to smash the frozen yogurt creation in a few spots to create jagged, easyto-eat sections.

Store in an air-tight, freezer-safe container for up to 3 months.
