Lobster Roll with Mayonnaise

2 live lobsters

Martin’s Potato Rolls (or your favorite split-top top-loader buns) 1 tablespoon butter 2 tablespoon­s red onion,

minced

1 rib celery, minced 1 tablespoon lemon juice 1 tablespoon mayonnaise

Salt

Pepper

Chives, chopped for garnish

Instructio­ns: In a large pot of boiling salted water, cook lobsters until they turn red, about 8 to 10 minutes. Allow lobsters to cool, then remove the meat and chop into ½-inch pieces.

Place a skillet over medium heat and add a tablespoon of butter. Toast the buns on both sides. Reserve.

In a mixing bowl, combine lobster meat with red onion, celery, lemon juice and mayonnaise. Season with salt and pepper.

Fill the toasted buns with the lobster mixture and garnish with chopped chives.
