Bubby’s Jewish Soul Food to open soon

Bubby’s Jewish Soul Food has announced it will open Nov. 14 at Northwest Military Highway and Wurzbach Parkway near the Barshop Jewish Community Center. The restaurant is owned by Jason Fiske and Charlie Nuttall.

“It’s been very exciting and it’s been a little stressful, but we are ready to do this and can’t wait to greet customers,” Nuttall said.

The menu is still in developmen­t, but patrons can expect to see a variety of New York bagels. Fiske and Nuttall traveled to New Jersey for a “bagel boot camp” with renowned bagel consultant Beth George. The owners previously said they planned on starting with core favorites, like plain, everything, onion and sesame, then branching out with seasonal variations and something called a San Antonio bagel.

Bubby’s Jewish Soul Food also will offer other baked goods, including bialys, rye bread, babkas and challah bread, as well as deli sandwiches, desserts, spreads and traditiona­l Jewish fare, such as chopped chicken livers, kugel and whitefish salad.

Service will be casual with deli-style counter ordering, and there will be room to seat about a dozen people inside and 18 on the patio.

Fiske said previously that Bubby’s will not be rabbi-certified kosher but the menu will be “kosher respectful.”

“We are going to keep the foods separated according to rules. No dairy touching meat, no pork, separate cutting boards,” he said.
