JOSEPH’S CHOCOLATE BROWNIES

BROWNIES

2 sticks salted butter, softened and room temperatur­e, plus more to grease a pan

1 cup granulated sugar

4 eggs, room temperatur­e

2 cups Hershey’s Chocolate Syrup 1⁄2 teaspoon kosher salt

1 teaspoon pure vanilla extract 1 cup unbleached all-purpose flour 1 cup coarsely chopped pecans or walnuts (optional)

Softened butter for greasing the pan

ICING

1 stick salted butter, room temperatur­e

1 cup granulated sugar

1⁄4 cup whole milk

1⁄2 cup semi-sweet chocolate chips

1⁄2 cup small marshmallo­ws 1 tablespoon pure vanilla extract For the brownies: Heat the oven to 350 degrees. Lightly grease a 9- by 13-inch baking pan with softened butter. In the bowl of an electric mixer, fitted with the paddle attachment, cream 2 sticks of butter and the sugar on medium-high speed until light and fluffy, 2-3 minutes, scraping down the sides of the bowl as needed. Turn the mixer to medium and add the eggs one at a time, mixing for 1 minute after each addition. Stir in the Hershey’s Chocolate Syrup, salt and vanilla and mix until incorporat­ed. The batter might look curdled or grainy at this point. It’ll come back together when you add the flour.

With the mixer on low, add the flour in 3 batches and mix just until the flour is incorporat­ed after each addition and scraping down the sides and the bottom of the bowl as needed. Stir in the chopped nuts, if using. Pour the batter into the prepared pan and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Remove the pan from the oven and place on a wire rack to cool.

For the icing: Melt the butter in a medium saucepan over medium heat. Add the sugar and milk and stir to combine. Bring the mixture to a boil without stirring. Swirl the pan and use a damp pastry brush to brush off any sugar that has stuck to the sides of the pan. Boil for about 1 minute. Remove from the heat and stir in the chocolate chips, marshmallo­ws and vanilla and mix until smooth. Pour over the warm brownies immediatel­y and with an offset spatula or a spoon and spread to even out the icing. Makes 12 brownies
