2 restaurant­s debut at the Pearl’s food hall

Whether you’re craving brisket or Bolognese, a pair of new restaurant concepts in the Pearl’s Food Hall at Bottling Department have you covered.

Three Six General already has earned a following among Pearl Farmers Market fans. Founder Mattison Bills launched the business in 2019 in San Marcos with a lineup of locally sourced meats butchered in house, smoked meats, charcuteri­e and a selection of natural wines. Three Six General’s food hall location currently serves fried chicken sandwiches, hot pastrami sandwiches, chicken wings and sides, with a roster of classic Texas-style oak-smoked meats to come in the next few weeks.

“I love San Antonio and am incredibly thankful to have the opportunit­y to be a part of this community,” Bills said in a media release.

The operators of the other new concept, Pasta Factory, are no strangers to the Pearl’s food hall. Wife-and-husband team Susana and Orlando Aguirre previously ran Chilaquil in the space, and earned accolades for their robust and well-balanced chilaquile­s.

The couple’s new venture leans heavily Italian, swapping

the carby delights of tortillas for pasta. The menu offerings include a classic meaty Bolognese sauce with spaghetti, fettuccine Alfredo, poblano penne rigate, pomodoro spaghetti and lasagna. Diners have

the option to add grilled chicken or shrimp and roasted vegetables to their order, and tiramisu is available for dessert.

“Following our growth from Chilaquil, we’re excited to expand our offerings and share

the food that connects our community,” chef Orlando Aguirre said in the release.

Mi Roti run by the James Beard Award nominated Lattoia Massey, aka Chef Nicola Blaque, of The Jerk Shack; pizza-by-theslice outfit WonderSlic­e owned by chef Ben Schwartz;, and Park Bar, which serves a selection of beer, wine and cocktails.
