Brick-and-mortar Mi Frijoles to open
Mi Frijoles Taco Shop, a popular taco cart and catering operation in New Braunfels, will open a brick-and-mortar location in that city by the end of the year.
It’s owned by San Antonio native Andy Chavez, who said he wants to bring true San Antonio West Side tacos to New Braunfels, while channeling some of the California style he picked up from his grandmother’s family.
When it opens on South Union Avenue in November or December, Mi Frijoles will offer breakfast tacos and specialty tacos with al pastor, carne asada, chicharrones en salsa and shredded pork on handmade flour and corn tortillas. Plans are to add barbacoa, enchiladas, morcilla, mollejas and moles down the line. Chavez said he plans to be open from 7 a.m. to 5 p.m. Tuesday through Sunday.
Chavez, 47, who started his taco cart nine years ago, works as the property manager at Gruene Harley-Davidson in New Braunfels. But he’s turned a gig serving tacos on the weekends into a full-time passion.
“My dream was opening my own restaurant,” Chavez said. Part of that dream is using recipes from his grandmother and honoring his West Side roots by setting a good example for kids from what he affectionately calls his old barrio stomping grounds.
