Grilled Grapefruit Paloma cocktail
2 large grapefruits, sliced in half
2 tablespoons sugar Ice
4 ounces tequila
2 tablespoons honey
2 cans lime- or grapefruit-flavored soda water
2 large sprigs rosemary
Instructions: Set a grill up for direct heat. After the charcoal has ashed over, dip the cut surface of the grapefruit halves in sugar (making sure to coat the surface), and grill cut-side down until char marks have formed (about 3-4 minutes), then remove.
After the grapefruit halves have cooled slightly, juice them.
Add ice to 2 high-ball or old-fashioned glasses (they should hold at least 8 ounces). In each glass, pour 2 ounces of tequila, half the grapefruit juice, 1 tablespoon of honey and top with soda. Use a rosemary sprig to stir.
