Marmalade Learn how to make and preserve marmalade. Happy Girl founder Jordan Champagne teaches the art of balancing sweet, tart and sour using a variety of citrus and spices in two recipes. You leave class with a jar of each. 5 to 8 p.m. March 6. $95.

Cheesemaki­ng This workshop covers the basics of cheesemaki­ng, food safety and other essentials. Learn to make chevre, ricotta and kefir, then break for a cheese-filled brunch. 10 a.m.-1 p.m. March 25. $95.

Shrubs, syrups and infusions Explore the versatilit­y of fruit juices and citrus peels and discover the virtues of shrubs, refreshing fruit-based “drinking vinegars.” Participan­ts will share a light dinner and will leave with three jars of goodies. 5-8 p.m. April 21. $95.

Fermentati­on This introducti­on to making kimchi, sauerkraut, kombucha and other fermented foods tackles food safety, flavor combinatio­ns and other essentials. Includes brunch and three jars of goodies. 10-1 p.m. April 22. $95.

Happy Girl Kitchen Co. The cafe and storefront is at 173 Central Ave., Pacific Grove. Shop hours are 7 a.m.-5 p.m. daily, cafe hours are 7:30 a.m.-3 p.m., Monday-Saturday; coffee and tea until 5 p.m (food service ends at 3 p.m.); 7:30 a.m.-2 p.m. Sundays. Pancake breakfasts are offered 7:30-11 a.m. Sundays and Mondays, with gluten-free options, fresh whipped cream, maple syrup and jam bar.
