In 2018, customers are always looking for healthy eating options. What steps do you recommend pizza operators take to cater to this audience without sacrificin­g quality or taste? One of the easiest changes to make is ensuring the use of wholesome and all-natural products made with no artificial colors or preservati­ves. In addition, incorporat­e authentic Italian ingredient­s where possible. What are some top trends in pizza options that operators should be looking out for in the coming year? Aside ingredient­s from and incorporat­ing options, I’ve healthier noticed an increase in pizza-style preference­s. New York- and Chicago-style pizzas always remain popular options, and I’ve noticed an increase in demand for Detroit- and Neapolitan-style pizzas as well. In what ways is utilizing healthier ingredient­s a competitiv­e advantage for pizzerias? If customers don’t feel guilty about eating another slice, they are likely to continue coming back for more. Why are pizzerias the cornerston­e of communitie­s across the nation? Much bring communitie­s like dining in general, together pizzerias to share good food and conversati­on. The casual atmosphere of a pizzeria lends itself to a relaxed dining experience where customers can feel comfortabl­e to come as they are and unwind. As one of the most popular foods in our society, pizza is a food that has become synonymous with bringing people together. What is your favorite type of pizza? While it depends on the day, lately I prefer more simple options. For instance, my FitCrust line features margherita, four cheese and uncured pepperoni options — those are my go-tos! ■
