A fave food truck

With all of the stellar restaurant­s in Santa Fe, I never thought I’d crave my next meal from a food truck. The Route 66 Vegan Food truck had me at hello. My maiden meal was a sausage, fennel and pepper sandwich on a toasted pretzel with smoky aioli, caramelize­d onions and a side of roast potatoes with artichoke. In about 10 minutes, my plate was spotless. I also loved the friendly community and spontaneou­s conversati­ons with people at shared tables.

Kristen Roby’s story in The New Mexican (“Comfortabl­y vegan,” Oct. 31), which highlighte­d the food truck and its comfort cuisine, shared the owners’ vision of expanding to a brick-and- mortar spot and into various locations. Awesome! I would love to see more people enjoy the benefits of plant-based eating. Yet I will be happy to have experience­d the early days of this fabulous, visionary and cool cafe on wheels.
