A fave food truck
With all of the stellar restaurants in Santa Fe, I never thought I’d crave my next meal from a food truck. The Route 66 Vegan Food truck had me at hello. My maiden meal was a sausage, fennel and pepper sandwich on a toasted pretzel with smoky aioli, caramelized onions and a side of roast potatoes with artichoke. In about 10 minutes, my plate was spotless. I also loved the friendly community and spontaneous conversations with people at shared tables.
Kristen Roby’s story in The New Mexican (“Comfortably vegan,” Oct. 31), which highlighted the food truck and its comfort cuisine, shared the owners’ vision of expanding to a brick-and- mortar spot and into various locations. Awesome! I would love to see more people enjoy the benefits of plant-based eating. Yet I will be happy to have experienced the early days of this fabulous, visionary and cool cafe on wheels.
