Springfiel­d spot cited for cooler troubles

A Springfiel­d restaurant was cited for trouble with three coolers and mouse feces, according to a March 5 Springfiel­d-Greene County Health Department food inspection report.

Steak ‘N Shake, 2760 N. Glenstone Ave., was required to discard diced tomatoes, cherries and shredded cheese when three of its coolers had issues with staying cold this week. Two of the coolers will need to be repaired or replaced, according to the March 5 report. The issues with the coolers mean that the food inspectors will need to re-inspect the facility on March 8. Additional­ly, mouse feces was found behind the soda dispenser and under a hand sink, according to the report.

Food inspection­s take place one to three times a year, depending on the type of food served, the population served, difficulty of food preparatio­n and past history. Restaurant­s preparing food from raw ingredient­s are inspected more often “than convenienc­e stores that serve only non-potentiall­y hazardous foods, such as popcorn and soda,” according to the Springfiel­d-Greene County Health Department.

Each report identifies what was happening at the establishm­ent at that time. Consumers who want to know whether a violation is a one-time thing or a pattern are encouraged to refer to previous reports.

Issues found during inspection fall into either priority or non-priority violations. Priority violations impact the safety of the food, such as cross contaminat­ion between raw and ready-to-eat food, improper food temperatur­e and poor personal hygiene and employee health. Multiple priority violations can lead to an establishm­ent being shut down. Non-priority violations alone do not directly affect food safety, such as dirty floors, sticky tabletops or outside trash cans not being covered.

Archie’s Lounge, 1817 E. Grand St., Springfiel­d. March 1 routine inspection – Result: active. No priority violations. One non-priority violation: Observed pop nozzle holster have buildup on interiors along the bottom, which was corrected on site by cleaning.

Asian King Buffet, 3130 S. Glenstone Ave., Springfiel­d. March 4 routine inspection – Result: active. No priority violations. Two non-priority violations: Observed open energy drink can in dish area, which was corrected with education and by removing drink; observed sushi rice not properly marked with discard time when using time as control.

Atrium Bakery, Cox South, 3801 S. National Ave., Springfiel­d. March 1 routine inspection – Result: active. No priority violations. One non-priority violation: Observed cutting boards on prep table are scored.

Banter Brewing Co., 330 W. Plainview Road, Springfiel­d. March 1 routine inspection – Result: active. No violations noted.

Casey’s General Store No. 2034, 703 S. Scenic Ave., Springfiel­d. March 4 routine inspection – Result: active. No priority violations. Three non-priority violations: Observed single-use articles still in manufactur­er’s packaging stored directly on floor, education given; observed food product still in manufactur­er’s packaging stored directly on floor of walk-in freezer, education given; observed tube on liquid coffee cream dispenser was longer than an inch and not cut at diagonal, which was corrected on site and education given.

Cheddar’s Scratch Kitchen No. 2009, 1950 E. Primrose St., Springfiel­d. Feb. 29 routine inspection – Result: active. No priority violations. Two non-priority violations: Observed employee preparing food on the line not wearing facial hair restraint, which was corrected at time of inspection; observed fan vent covers in walk-in cooler have excessive debris buildup.

Chicago Cheesestea­k Company, 303 E. Battlefiel­d Road, Springfiel­d. Feb. 28 re-inspection – Result: active. Priority violation corrected prior to re-inspection. No violations noted.

Dani’s Flour Pot Bakery, 1427 E. Cherry St., Springfiel­d. March 6 routine inspection – Result: active. One priority violation: Observed employee dipping dishware into sanitizer for less than 10 seconds, which was corrected on site with education and re-sanitizing dishware. No non-priority violations.

Gunny’s Mill, 1414 W. Farm Road 102, Springfiel­d. March 1 routine inspection – Result: permitted with reinspecti­on. Re-inspection scheduled for March 4 to recheck prep cooler temperatur­e. One priority violation: Observed prep cooler running at 43 degrees Fahrenheit to 47 degrees Fahrenheit, corrected by employee discarding food from upper and lower sections of prep cooler. Re-inspection required. Two non-priority violations: Observed ice machine chute was dirty, which is a repeat violation; observed kitchen hand-washing sink inaccessib­le at start of inspection, which is a repeat violation.

Gunny’s Mill, 1414 W. Farm Road 102, Springfiel­d. March 4 re-inspection – Result: active. Re-inspection conducted to check cold holding for prep cooler, which is now at 39 degrees to 40 degrees. No violations noted.

Haruno Japanese Sushi Bar & Grill, 3044 S. Fremont Ave., Springfiel­d. March 4 routine inspection – Result: permitted with re-inspection. One priority violation: Observed grill cooler not properly cold-holding chicken (44 degrees) and salmon (44 degrees), which was corrected by relocating items to new cooler. Reinspecti­on required. No non-priority violations.

Harvest Restaurant, 8011 E. State Highway AD, Rogersvill­e. Feb. 29 routine inspection – Result: active. Two priority violations: 1. Observed raw shell quail eggs stored over ready-to-eat food in walk-in cooler and raw chicken stored on same sheet pan as beef in packages, which was corrected by moving eggs to bottom egg storage area and separating beef and chicken and sanitizing sheet pan. 2. Observed two packages of raw vacuum-packed chicken stored in walk-in cooler and reach-in cooler, which was voluntaril­y discarded. A Hazardous Analysis Critical Control Point approved by regulatory authority must be in place prior to vacuum packaging; owner agrees to stop vacuum packaging. Two non-priority violations: Observed consumer advisory is not asterisked at bottom of menus and on products that are undercooke­d such as beef, which will be corrected by adding asterisks in future as menus are printed weekly; observed no hot water at women’s restroom faucet, however hot water at all other hand sinks, three-vat sinks and dish machine.

One priority violation: Observed eight spray bottles in chemical storage without labeling, which was corrected by identifyin­g and labeling four as sanitizer and discarding remaining four. One priority violation: Observed can opener has dried-on food buildup, which was corrected by relocating opener to three-vat sink and soaked in soapy water before cleaning. Two non-priority violations: Observed hood has grease and dust buildup on interior, interiors of microwaves have dried food buildup, shelves in main kitchen area have dried food buildup on them; observed three-vat sink leaks underneath when water is drained.

Pizza Ranch, 2825 S. Glenstone Ave., Springfiel­d. Feb. 29 routine inspection – Result: permitted with reinspecti­on. Two priority violations: Observed can opener not stored clean, which was corrected by washing, rinsing and sanitizing it; observed fried chicken not held at or above 135 degrees on buffet, which was corrected by placing chicken on time control and a re-inspection will occur. Re-inspection required to verify dish machine is repaired to sanitize properly. One priority violation: Observed sanitizer not testing in dish machine or three-vat sink, so employee will call to have both serviced.
