Visitation will be held Friday, February 17, 2023, from 1:00 P.M. - 6:00 P.M. at West Memorial Chapel, Starkville, MS.

Funeral service will be held Saturday, February 18, 2023 @ 11:00 A.M. at Rock Hill UMC, Starkville, MS.

Interment will follow at Rock Hill Cemetery, Starkville, MS.

Jimmy Eckford, son of James William Eckford, Jr. and Katherine Oliver Eckford, was born and raised in Starkville MS. He married the love of his life, Ann Stevens of West Point, MS, in 1958. After graduating from the University of Florida, Jimmy and Ann made their home in Starkville, where he started and built a successful business, Eckford Dairy Supply, which equipped and serviced dairy farmers across the southeast. Jimmy and Ann were founding members of New Covenant Church in Starkville where they served for many years. In 1991, they surrendere­d the success they had come to know along with its familiar sites and surroundin­gs to answer the call of God and attend Rhema Bible Training Center in Tulsa OK. After graduation, they served with Moore Life Ministries until 2000 when they returned to Mississipp­i to be closer to family. After settling in Ridgeland, Jimmy, who was never one to retire, began to think of starting another business. Equipped with his history in the dairy business and a love for frozen custard, he opened the original Bop's Frozen Custard in Jackson.

Jimmy was known for his excellent work ethic, his ability to fix anything and everything (sometimes with duct tape), and his resolve to live life to the fullest— as evidenced by his love for people, and zeal for motorcycle­s, boats, and fishing. Jimmy was what the Bible called a faithful man, going beyond the call of duty and doing more than what was expected. Above all else, his faith and love for Jesus Christ impacted everything he did and everyone he met. He was a loving and devoted husband, adored by his family, a friend to many, and leaves a legacy of faith and excellence. He was preceded in death by his wife of 65 years, Ann Eckford. Jimmy is survived by his sister, Mary Frances Lolley, his children Jim Eckford ( Jennifer), Melanie Williams (Danny), John Eckford (Melena), seven grandchild­ren, and seven great grandchild­ren.

Visitation will be Saturday, February 25, 2023 at Parkway Funeral Home, 1161 Highland Colony Pkwy, Ridgeland, MS from 10:00 -11:00 AM, followed by a memorial service and celebratio­n of life at 11:00 AM.
