The Mason Jar Café’s walnut crusted mahi-mahi

1 tablespoon unsalted butter ½ cup sliced onion, cut into half moons ½ cup sliced Granny Smith apples, cut into half moons ¼ cup water 1 tablespoon brown sugar 1 teaspoon cider vinegar 1 7-ounce fresh mahi-mahi filet ½ cup buttermilk 1 large egg ½ teaspoon Dijon mustard

Canola or vegetable oil, for baking sheet 2 tablespoon­s chopped walnuts All-purpose flour, for dredging

Salt and black pepper, to taste 1 Heat a medium sauté pan over medium heat. Heat butter and sauté onions until caramelize­d. Add apples and sauté until tender. Add water and brown sugar, stirring until sugar is dissolved and liquid reduces and thickens. Add vinegar and season with salt and pepper, to taste. Set aside and keep warm. 2 Preheat oven to 375 degrees F. Season both sides of fish with salt and pepper. Dip one side of filet in flour. In a shallow dish, whisk together buttermilk, egg and Dijon. Dip floured side of filet in buttermilk mixture. Place fish, floured side up, on oiled baking sheet. Press walnuts on top side of fish. Bake until mahi-mahi is cooked through, about 5 minutes. 3 Transfer mahi mahi to serving plate and top with caramelize­d onion and apples. Makes one serving.
