Stuffed peppers an easy and complete meal
Q: Whenever I shop at Doris Market I always pick up their stuffed peppers. It’s a quick meal and my son loves them. Can you please ask the chef for the recipe? I’d like to try to make them for him at home. — Charlotte Jensen, Lighthouse Point
A: A “quick meal” is only part of the appeal of the stuffed peppers from Doris Italian Market and Bakery (multiple locations, dorismarket.com). Marketing director Jacqueline Alfano notes the recipe’s draw: “It’s always a favorite because it can be a side dish but filling enough for a meal, and the ingredients are easy and always available year-round.” Alfano says the stuffed peppers were one of Doris Market’s first prepared food items, introduced in stores back in the early ’90s. It has been a staple ever since.
Accessible ingredients, versatile and easy to prepare sounds like a winner all the way around. And it’s a complete, balanced meal with protein, veg and starch – check. A big thank you to head chef and catering super- visor Joe Rondina for scaling down the recipe to make it more manageable for home cooks.
Rondina is already busy thinking about Thanksgiving and holiday menus. He estimates his kitchen staff cooks about 200 Thanksgiving turkey dinner packages for each of the five locations. The Market offers two packages based on 12- to 14- or 18- to 20-pound birds with all the trimmings. You can find complete menus online at dorismarket.com, in addition to other specials and in-store promotions such as their homemade mozzarella demonstrations on Saturdays at the North Palm Beach location. If you plan on taking a load off this year, Doris Market is open Thanksgiving Day until noon to accommodate customers picking up.
