This duo of modern Italian restaurant­s, founded in Palm Beach Gardens a decade ago, has refreshed its menu with more than 15 new items.

“We decided after celebratin­g 10 years [that] we wanted to go back to our roots and simplify the menu with old-school Italian traditions and recipes,” executive chef Alain Zimmer says.

Highlights include mozzarella prepared tableside on a cart with three options ($18; $24 for all); butter-poached, colossal shrimp scampi atop grilled ciabatta ($18); pasta primavera ($18); Papa Angelo’s Pizza with sweet sausage, fresh mozzarella, provolone, Parmigiano-Reggiano and roasted anaheim peppers ($17); and linguini shrimp fra diavolo ($24).

One of Zimmer’s new favorites is the 14-ounce, center-cut veal chop (market price). “The flavor profile is amazing. Seared in a seasoned cast-iron skillet, it creates a very distinct taste,” he says. “The veal demi-glace is deeply complex. It is a slow reduction of many ingredient­s that is simmered and reduced for 24 hours.”

He also favors the fettuccine with pancetta, roasted cauliflowe­r and roasted garlic ($19). “It offers another artisanal layer to our menu diversity, bringing our 10 years of handcrafte­d pasta to the forefront,” Zimmer says.
