Broccoli salad a new hit at bagel shop
Q. Someone recently gave me some broccoli salad from Way Beyond Bagels in Delray Beach. The dressing did not seem to be too mayonnaisey and it was delicious. I would love to find the recipe. Thank you so much for your help. -- Elaine Hershman, Boynton Beach

Elaine’s request came as a surprise to Heather Musiello, who oversees the dining room at Way Beyond Bagels (9858 Clint Moore Road, Boca Raton, 561-883-3535; 16850 Jog Road, Delray Beach, 561-638-1320, waybeyondbagels.com) in Boca Raton, in addition to handling the company’s marketing and PR. Musiello explained, “We’re really known for our specialty chicken salads and our egg white salad. They fly off the shelves. The broccoli salad is a newer menu item that guests seem to really be enjoying. Probably be- cause it’s prepared fresh daily and it’s healthy.”
Musiello’s family has been in the bagel business in Long Island, N.Y., “for years.” In 2013, when her mother and managing partner, Mindy Hyman, was presented with an opportunity to take over the New York style market and eatery in Delray, an existing business of 13 years, the family seized the opportunity. “Boca is like a mini New York. It has the same clientele we had in Long Island. And we love the weather,” Musiello said.
The family kept the original recipes that the breakfast and lunch spot had become known for, and expanded grab-and-go and take home dinner options. To maintain the New York connection and insistence of top notch ingredients, their fish products come from Acme in Brooklyn, a reputable and familiar brand for their diners. Due to an overwhelming response, the family expanded to their second location in Boca Raton in 2016. The long lines are a testimony to their quality products and success.
Q. We had family visiting recently and dined at Marker 88 in Islamorada. Some of the folks have significantly restricted diets due to illness and food allergies. They ordered salad with raspberry vinaigrette and loved the dressing. Any chance you could get the recipe? — Susan Murray, Hollywood

After several phone calls to Marker 88 ( 88000 Overseas Highway, Islamorada, 305-852-9315, marker88.info) I made contact with a manager. Unfortunately, a followup call revealed she was no longer with the company. During our conversation, I found out the waterfront restaurant no longer serves the raspberry vinaigrette on their regular menu. But the dressing is offered as a special occasionally and was replaced on the menu with a mango-citrus vinaigrette. Rather than leaving you high and dry Susan, I’m sharing a recipe from my files.
