David Grutman, known for his nightclubs (LIV and Story) and restaurants (Komodo and Planta), has unveiled a new restaurant concept featuring dishes from a champion of the European edition of “Top Chef,” Jean Imbert.
“[Imbert’s] modern, chic cuisine brings a new and different flavor to the Design District,” says Grutman, partner with rapper Pharrell Williams.
Globally influenced highlights include braised carrots with yogurt ($11), polenta topped with corn and popcorn ($15), sea bass sashimi with mango, serrano and kumquat ($18), roasted chicken with currycarrot puree ($29), hamachi tartare topped with crème fraiche and caviar and circled with blinis ($35), and duck breast with pumpkin and mushrooms ($36).
For dessert, a sphere of pavlova reveals strawberries, lime sorbet and pecans inside ($14).
Cocktails ($15) include the Kalahari with tequila, watermelon, chili, ginger and lime and the Mon
Chéri with cherry-infused bourbon.
Upstairs, a rooftop lounge leads into Bar Bevy, which boasts DJs nightly amid a dark Moroccan-style ambiance with velvet seating, tapestry-like wallpaper and a luxurious cabana.
“We want people to think of Swan and Bar Bevy as two totally different experiences, so it was important to differentiate their décor,” Grutman says. “Swan is the light, feminine dining venue while Bar Bevy is the sultry, nightlife and cocktail venue.”
Swan’s old-school, Miami-inspired pastel interior of pinks and greens wraps around a lush courtyard decorated with string lights, vine-covered wood fencing, wide-striped marble flooring and hip music. Lounge areas and tables surround a central towering tree and fountain.
Lunch and dinner are served daily.
