New restaurant­s coming to expanded Hard Rock Hotel

A new Italian restaurant, American live-fire grill, Las Vegas-style buffet and 24-hour diner/deli will join the food lineup at the Seminole Hard Rock Hotel and Casino when a giant guitar-shaped hotel opens in October, the Seminole Tribe announced Thursday. All told, the resort will offer 19 eateries and 20 bars and lounges after the $1.5 billion expansion is complete.

The culinary offerings feature several holdovers, including Council Oak Steaks & Seafood (moving to a new permanent home after operating in a ballroom for the past year), the Bol Asian restaurant (which reopened this month after nearly tripling in size), the Hard Rock Cafe (which moved last November), and Kuro Japanese restaurant (which will remain in its current location in the old hotel). A new food court also opened earlier this month.

Chains are apparently out and concepts developed by the tribe will dominate, according to the list released Thursday.

The newcomers:

Canoa: An American wood-fire grill restaurant. Canoa’s open-kitchen concept will highlight live-fire grilling of seafood, meats and fresh produce. Craft cocktails and more than 100 wines will be offered.

Cipresso: A contempora­ry twist on Italian American fare that will still be rooted in tradition. The menu will feature handmade pastas, pizzas and specialty dishes. The dining room will feature a mix of family-style banquettes and bartop seating. Negronis will be a bar specialty, and the wine list will focus on Italian and old-world labels.

Fresh Harvest: A buffet with the same name as the one found at the Seminole Coconut Creek Casino. It will feature live carving stations, soups, salads, raw bar, an Italian station with pizza and pasta, an Asian station with dim sum, rice and noodles,

a rotisserie/grill and desserts.

Rise Kitchen & Deli: Located at the base of the Guitar Hotel, this 24-hour American diner/deli will feature floor-toceiling glass windows overlookin­g the new pool and lagoon. Rise will offer allday breakfast, salads, burgers, sandwiches and New York-style deli offerings, as well as a juice bar.

Constant Grind: A cafe featuring Lavazza coffee and specializi­ng in varied techniques such as nitro, cold drip and pour over. Led by pastry chef Ross Evans, the French-inspired, American bakery will offer house-baked breads and pastries, gelato and a grab-and-go station of sandwiches and salads.

Oculus Bar: Centrally located in the hotel lobby, the Oculus Bar will offer craft beers, wines and signature cocktails, with aperitifs, after-dinner drinks and vermouth taking center stage.

Daer Nightclub/Dayclub: The 44,000-square-foot, indoor-outdoor entertainm­ent complex is set to debut fall 2019, with three distinctiv­e concepts – a day club, nightclub and rooftop bar. This will be the second outpost of the Daer franchise, which debuted at the Hard Rock Hotel Casino in Atlantic City.

Other additions include two poolside dining concepts – Pool Bar & Grill and the Beach Club Bar & Grill – offering classic favorites with a tropical twist on a mix of small and large shareable plates, and Entice, an ultra-lounge opening in the resort’s new Promenade.

At the old Paradise Shops, the dining and entertaini­ng complex razed in 2017 to make room for the new hotel, familiar national names such as Johnny Rockets, Hooters, Wet Willie’s and Ben & Jerry’s Ice Cream populated the site, along with regional favorites such as Kilwin’s Chocolate, Bongos (an outpost of a Cuban minichain from Gloria and Emilio Estefan) and Martorano Hard Rock (from local Italian American chef Steve Martorano). None are on the new lineup list.
