Diabetes quick fix: Turkey Wrap

Turkey slices, sweet pimentos, and pickles rolled together in a colorful tortilla make a quick, put-together sandwich that can be taken to eat on-the-run. Helpful Hint: The filling can be used with a whole-wheat pita pocket or 2 slices of whole wheat bread. Shopping List: To buy: 1/2 pound sliced turkey breast, 1 small jar sliced sweet pimentos, 1 small jar sliced dill pickles and 1 small package 8-inch tortillas.

Staples: reduced-fat mayonnaise.

QUICK TURKEY WRAP 2 8-inch tortillas 2 tablespoon­s reduced-fat mayonnaise

1/2 pound sliced turkey breast

1 cup sliced sweet pimentos

1/2 cup sliced dill pickles

Place tortillas on counter top and spread with mayonnaise. Arrange turkey slices on top. Spoon 1/2 cup sweet pimentos on each wrap. Place 1/8 cup dilled pickles on each wrap. Roll wrap, slice in half and serve. If not serving immediatel­y, roll wrap in foil or plastic wrap. Makes 2 servings.

Per serving: 392 calories, 9 g fat, 2 g saturated fat, 97 mg cholestero­l, 39 g protein, 35 g carbohydra­tes, 4 g dietary fiber, 3 g sugars, 927 mg sodium.

Exchanges/choices: 2 starch, 1 vegetable, 4 lean meat
