SAVORY SWEET POTATOES
Jordan High, Texarkana
Ingredients:
4 large sweet potatoes
2 large red onions (Halved and sliced thinly)
1 tbsp of worchestire sauce
10-15 slices of applewood bacon (or favorite type)
6 tablespoons of butter
3/4 cup of milk (heavy cream or Coconut milk)
3 tsp of cayenne pepper (depending on spicy preference)
2 cups of brown sugar salt and pepper to taste
Directions: Peel and chop potatoes in to small-medium cubes. Bring a large pot of salted water to a boil. Add Potatoes and cook until tender, 20 to 30 minutes.
While potatoes are cooking, put 2 tbsp of butter in a medium-high skillet. Add onions, worchestire sauce, and 1/4 cup of brown sugar. Caramelize until fully cooked. set them aside
Cook bacon on skillet or in microwave. Chop to desired chunks
Drain water from potatoes. in the same pot, add the rest of the butter, milk/cream, 1 cup of brown sugar, and the salt and pepper. Whip with a whisk or blender. Add in Cayenne 1/2 tsp a a time until desired spice. Add in bacon and caramelized onions
Put sweet potatoes into a serving dish and sprinkle the rest of the brown sugar on top. Broil in the oven until the brown sugar caramelizes on top.
