Passover Apple Kugel
Soak 4 slices of matzo in water – squeeze out the water. 4 eggs separated- beat egg whites first then add yolks and beat again. ½ cup sugar 1-cup raisins Juice of 1/3 lemon and its zest ½ cup applesauce ½ small can crushed pineapple, drained 1 tsp. Cinnamon 3 apples, peeled, cored and diced 2 tbs. matzo meal Add the above ingredients to the soaked matzo. Place in a sprayed 9x12 Pyrex dish. Sprinkle matzo meal over the top. vou can use some extra raisins to garnish the top. Bake at 350 degrees for 35 minutes.
