Passover Ap­ple Kugel

Soak 4 slices of matzo in water – squeeze out the water. 4 eggs sep­a­rated- beat egg whites first then add yolks and beat again. ½ cup sugar 1-cup raisins Juice of 1/3 lemon and its zest ½ cup ap­ple­sauce ½ small can crushed pineap­ple, drained 1 tsp. Cin­na­mon 3 ap­ples, peeled, cored and diced 2 tbs. matzo meal Add the above in­gre­di­ents to the soaked matzo. Place in a sprayed 9x12 Pyrex dish. Sprin­kle matzo meal over the top. vou can use some ex­tra raisins to gar­nish the top. Bake at 350 de­grees for 35 min­utes.
