Valley establishm­ents refresh their lineups with cocktails specifical­ly for spring.

Spring is in full bloom, and for drink menus, that means refreshing flavors for the warmer but still pleasant weather. Spring cocktails often feature pretty pastel hues, some showcasing various botanicals, floral ingredient­s or seasonal fruits.

Here are 21 spring cocktails to try at restaurant­s and bars around the Valley.

The Mix Up Bar

If you love coconut, you must put this drink on your list to try. The Coconut Dream ($15) features Don Julio reposado tequila infused with coconut, dry curaçao, lime and pineapple juices and simple syrup. It’s topped with coconut foam and lime dust.

Beckett’s Table

Justin Beckett’s restaurant has a charming patio and you’ll want to sip The Palmaire ($10) while you’re sitting outside enjoying the spring weather. The drink is made with both pomegranat­e liquor and juice, orange vodka, housemade honey syrup, lemonade and mint.

True Food Kitchen

While you’re enjoying healthy, clean eating at this Sam Fox spot, get the Blueberry Royale ($12), a blend of muddled mint, blueberrie­s, lemon juice and simple syrup that is shaken with St. Germain elderflowe­r liqueur and Prairie organic vodka, and topped with prosecco and blueberrie­s.

North Italia

Pizza and pasta go nicely with North’s herbal concoction, simply called the Rosemary & Lime ($11). It’s made with Ketel One vodka, Amaro Nonino, simple syrup and lime shaken over ice, then strained and topped with a dash of angostura bitters garnished with a rosemary sprig and lime slice.

Blue Hound Kitchen & Cocktails

The Hops and Harmony ($14) is a marriage of spirits and beer, made with barrel-aged Genevere gin, cynar Italian bitter liqueur, IPA, lemon juice, hops simple syrup and salt water bitters.

Clever Koi

The Asian-fusion restaurant offers the light and simple Paloma ($10), made with Arette blanco tequila, lime and a pinch of Maldon sea salt, and topped with house-made grapefruit lemongrass soda.

Matt Carter’s stylish Italian spot in Scottsdale is showcasing the ThreeDay Weekend ($12), a blend of Bulleit rye whiskey, aperol, lillet rose, rhubarb bitters and lime juice. It’s topped with prosecco and garnished with blood orange wheels.

Twisted Grove

If you’re looking for a little heat, try the Sweet & Spicy ($9). This mix of tequila, Cointreau, sweet and sour and jalapeño agave syrup is served over ice in a bucket glass and garnished with a cayenne salt rim and half of a red jalapeño.

Okra Cookhouse & Cocktails

Guests can always expect an inventive array of cocktails at this Southern spot with an Italian flair. The Blind Melon ($11) starts with muddled pink peppercorn­s. Next, Hendrick’s gin, Peychaud’s Aperitivo, watermelon syrup and lime are added, shaken over ice and strained into a rocks glass. The attractive drink is garnished with a dehydrated lime wheel and pink peppercorn­s.

Along the buzzing Seventh Street uptown corridor is this trendy restaurant, which features a lovely patio that is a great spot for drinks. The Sonoran Sunset ($10) is the perfect cocktail to have al fresco, made with Tito’s vodka, Giffard orgeat, lemon juice and housemade grenadine, and garnished with a luxardo cherry.

Omni Scottsdale Resort & Spa at Montelucia

The swanky Scottsdale resort created this drink for one of the Valley’s most popular times of year: The Spring Shandy ($12) is a bright, easy-todrink mix of sweet tea vodka, simple syrup, Hefeweizen beer, tea, mint leaves and lemon juice, and garnished with a lemon wedge.

Ladera Taverna y Cocina

The newest restaurant from Genuine Concepts is a hip Mexican spot in Sunnyslope. It’s featuring three spring drinks: La Reyna Peliroja ($12) is spicy and smoky combinatio­n of Kimo Sabe reposado mezcal, strawberry, ginger beer and Firewater bitters. El Santo ($9) is a sweet and tangy mix of Old Grand-Dad whiskey, Patron Citronge liqueur, tamarind and lime. Telenovela ($11) is a dramatic blend of St. George green chili vodka, ginger, lime and pineapple.

Geordie’s Steak at Wrigley Mansion

A Prickly Pear Paloma ($13) is the perfect drink to soak up the gorgeous Valley views. The bright pink drink is made with Milagro blanco tequila, prickly pear puree, lime juice and Jarritos grapefruit soda.

The Brickyard Downtown

This popular downtown Chandler spot is featuring a spring drink made with tropical flavors. The Cane You Feel the Love ($12) cocktail is made with Plantation and Wray & Nephew Overproof rums, coconut cream, pineapple-passion syrup and lime juice. It’s topped with Skipper dark rum and fernet branca.

Cuff

This hip downtown Glendale eatery serves new American cuisine and craft cocktails. For the warmer spring weather, it is highlighti­ng the Sangria No. 43 ($9), which can be served with Provisione­r red blend or Moscato d’Asti. The base is made with Licor 43, a Spanish liqueur, along with fruit juices, orange bitters and fresh fruit.

The Valley-based chain of Southweste­rn restaurant­s offers a wide variety of margaritas and other tequila-based cocktails. The Cazuela ($10) is a light and refreshing mix of Casamigos blanco tequila and grapefruit juice topped with champagne.

Old Town Gringos

The popular spring training spot in the heart of downtown Scottsdale is offering two revitalizi­ng drinks through the season. The Maddon’s Moxy ($10) is made with Three Olives citrus vodka, blue at Old Town Gringos. curaçao, and sweet and sour, while the San Francisco Mule ($10) features Deep Eddy orange vodka, lime juice and ginger beer.
