SWEET POTATO TURKEY BURGERS WITH FRESH MANGO SALSA
1 small sweet potato,
about 8 ounces
1 small fresh mango, peeled, pitted and cubed
2 tablespoons fresh mint 2 teaspoons fresh lime
juice
1 teaspoon honey
1/4 cup + 2 teaspoons finely diced red onion, divided
1 pound ground white
meat turkey 2 tablespoons chopped
cilantro
1/4 teaspoon salt ⅛ teaspoon ground black
pepper
4 large lettuce leaves
Pierce the sweet potato with a fork, and microwave it on high for 6 minutes or until tender. Remove the skin, and place 1/2 packed cup of sweet potato into a large mixing bowl. Reserve the remaining sweet potato for another use.
While the sweet potato is cooking, make the salsa by combining the mango, mint, lime juice, honey and 2 teaspoons red onion in a second, nonreactive bowl. Set aside.
Add 1/4 cup red onion, the ground turkey, cilantro, salt and pepper to the bowl containing the sweet potato and mix well. Divide mixture into four patties. Cook patties in a nonstick skillet over medium-high heat for about 5 minutes per side, or until the turkey reaches an internal temperature of 165 degrees. Wrap the burgers in lettuce leaves. Serve each with 1/4 cup mango salsa and your choice of toppings. Makes 4 burgers and 1 cup salsa.
