Brewpub’s tofu sandwich is big on flavor, back for short time

My book club went to The Wrecking Bar in Little Five Points to discuss our monthly selection. One of our members ordered their Tofu Sandwich and quickly had us all try a bite. It was delicious! Since then, I have thought about going back just to order this sandwich — and I am not a big fan of tofu! I would love the recipe if The Wrecking Bar will share. Thanks! — Danielle Carter, Atlanta

Herb Vinaigrett­e recipe for The Wrecking Bar’s Tofu Sandwich,

Koval serves the sandwich on pain de mie buns from TGM Bread. You can buy those, too, but call ahead to the bakery at 678-9279131 to make sure they’re available, or substitute your favorite hamburger bun. Pure Abundance Luna is a delicious cashewbase­d dairy-free cheese available at Whole Foods, Nature’s Garden Express at Krog Street Market, Sevananda and Nuts ‘n Berries.

In a skillet, heat 1 tablespoon oil. Slice buns down the middle and toast cut side down until golden brown. Place buns on serving plates. Repeat until all buns are toasted.

In another skillet, heat remaining ¼ cup oil. Remove remaining tofu slices from marinade and pat dry. Sear tofu 3to4minute­sperside,then remove from skillet and set aside. You could save the marinade and use it again if you refrigerat­e it and use within a week.

Assemble sandwiches: Divide seared tofu between buns. Top with lettuce and radish mixture, then add slices of Pure Abundance cheese. Spread top of the bun with tofu mayonnaise, close bun and serve immediatel­y. Serves: 4

Per serving: 484 calories (percent of calories from fat, 53), 22 grams protein, 37 grams carbohydra­tes, 4 grams fiber, 30 grams fat (5 grams saturated), no cholestero­l, 1,537 milligrams sodium.
