REVIVAL’S TRIPLE CHOCOLATE TART
1 1/2 cups plus 2 tablespoons
heavy cream
1/2 cup plus 2 tablespoons whole
milk
15 ounces semisweet chocolate
chips
1/4 cup granulated sugar
1/2 teaspoon salt
3eggs
1/2 Chocolate Tart Crust recipe,
prebaked (see recipe) Chocolate Glaze (see recipe, F3) Whipped cream and shaved
chocolate, for garnish Candied Orange Slices (see
recipe, F3)
Preheat oven to 325 degrees. Make filling: In a heavy saucepan, combine cream and milk and bring just to a boil.
In a large bowl, combine chocolate chips, sugar and salt. Pour hot cream mixture over chips and let stand 10 to 15 seconds. Stir until all chips are melted and mixture is smooth. Let cool slightly.
In a small bowl, stir eggs. Slowly whisk eggs into chocolate mixture. Pour filling over prebaked crust and bake 15 to 20 minutes or until edges are set and middle is soft set. Do not overbake. If you see cracks beginning to form, remove from oven. Let tart cool at room temperature and then chill in refrigerator 4 hours.
When tart has chilled, pour glaze on top and smooth surface. Let sit 30 minutes, then add shaved chocolate around the edge. Cut into 10 pieces. Garnish each piece with whipped cream and candied orange slices, if desired. Serves: 10
