WHITE CHOCOLATE GLAZE
1 ½ cups white chocolate
chips
⅓ cup cold apple cider 1 (.75-ounce) packet
powdered gelatin 1 cup granulated sugar ⅔ cup corn syrup
⅓ cup water
½ cup sweetened
condensed milk Coloring, if desired Edible glitter, if desired
Bring a small saucepan half filled with water to a boil. Reduce heat to a simmer and place a bowl on top of saucepan. Bottom of the bowl should not touch the water. Put chocolate in bowl and carefully melt, stirring occasionally. Remove bowl from saucepan while there is still a little unmelted chocolate and stir until chocolate is completely melted.
While chocolate is melting, in a medium bowl, stir together cider and gelatin and set aside.
In a small saucepan, combine sugar, corn syrup and water and bring to a boil. Boil 2 minutes. Pour hot mixture into gelatin mixture and stir. Stir in sweetened condensed milk and then pour all over melted chocolate. Stir to combine. Cool to 95 degrees and then add color or glitter, if desired. Pour over cake. Makes: 2 ½ cups, enough for three cakes.
