SWEET + SPICY PEANUT SAUCE
A classic peanut sauce is delicious and has so many uses beyond noodles. This sauce pairs particularly well with sweet potatoes.
¼ cup peanut or almond butter
2 tablespoons tamari or coconut aminos 2 tablespoons brown rice vinegar
1 tablespoon freshly squeezed lime juice
Dash or two of hot sauce
1 thumbnail-size piece ginger
1 small clove garlic, minced
2 teaspoons honey
1 teaspoon toasted sesame oil
2 tablespoons of water
Put the peanut butter, tamari, vinegar, lime juice, hot sauce, ginger, garlic, honey, and sesame oil into a food processor and run continuously until smooth.
Add about 2 tablespoons of water, or just enough that the mixture will coat the back of a spoon. Serve immediately.
This will keep for about a week in an airtight container in the fridge. Makes about 1/2 cup of sauce.
Per tablespoon: 73 calories (percent of calories from fat, 62), 2 grams protein, 5 grams carbohydrates, trace fiber, 5 grams fat (1 gram saturated), no cholesterol, 291 milligrams sodium.
