YAKI SAUCE (JAPANESE BBQ SAUCE)
1 cup smoked pineapple
½ cup light soy sauce
1 ½ cups eel sauce or sushi sauce
2 cloves garlic, minced
1/4 cup chopped scallion
1/4 cup mirin
1/4 cup sake
1/4 cup ginger
1 jalapeno, seeded and minced
Smoke pineapple for 10 minutes with the short ribs. Add all ingredients in a pot.
Bring to a boil and then turn down and allow to simmer until reduced by ¼ of its original volume.
Place in a blender and blend until well incorporated.
