YAKI SAUCE (JAPANESE BBQ SAUCE)

1 cup smoked pineapple

½ cup light soy sauce

1 ½ cups eel sauce or sushi sauce

2 cloves garlic, minced

1/4 cup chopped scallion

1/4 cup mirin

1/4 cup sake

1/4 cup ginger

1 jalapeno, seeded and minced

Smoke pineapple for 10 minutes with the short ribs. Add all ingredient­s in a pot.

Bring to a boil and then turn down and allow to simmer until reduced by ¼ of its original volume.

Place in a blender and blend until well incorporat­ed.

Per serving: 537 calories (percent of calories from fat, 82), 20 grams protein, 2 grams carbohydra­tes, no fiber, 49 grams fat (22 grams saturated), 103 milligrams cholestero­l, 795 milligrams sodium.
