BATROUN LEMONADE

4 organic lemons

2 organic navel oranges

1 cup granulated sugar

6 cups still water

1 teaspoon orange blossom water

Wash and juice the citrus. Cut the shells into eights. In a bowl, muddle the peels lightly with the sugar. Add the juice and marinate for about 2 hours at room temperatur­e, covered with a clean kitchen towel. Stir occasional­ly to ensure all the sugar is dissolved.

Strain through a fine-mesh sieve. Press on the peels to release more liquid. (If you have a potato ricer, press the peels into it to extract every last drop.)

In a pitcher, stir together the lemon-orange mixture, water and orange blossom water. Refrigerat­e until cold. Serve straight up. Serves 6 to 8 Per serving, based on 6: 176 calories (percent of calories from fat, 0), 1 gram protein, 43 grams carbohydra­tes, no fiber, no fat, no cholestero­l, 1 milligram sodium.
