Recipe for Burgundy Onions, BURGUNDY ONIONS

West says you can also use these onions as a garnish for steak. If prepared ahead, reheat them with a little butter before serving.

2 cups red wine 1 medium onion, diced 1 teaspoon kosher salt 1 grind freshly ground

black pepper

1/4 bay leaf

In a small pot, combine red wine, onions salt, pepper and bay leaf. Bring to a boil. Cook until almost all liquid is reduced, about 15 minutes, watching carefully and stirring occasional­ly. Cool and refrigerat­e until ready to use. May be made ahead and kept for up to two weeks. Makes: 1 cup
