Recipe for Burgundy Onions, BURGUNDY ONIONS
West says you can also use these onions as a garnish for steak. If prepared ahead, reheat them with a little butter before serving.
2 cups red wine 1 medium onion, diced 1 teaspoon kosher salt 1 grind freshly ground
black pepper
1/4 bay leaf
In a small pot, combine red wine, onions salt, pepper and bay leaf. Bring to a boil. Cook until almost all liquid is reduced, about 15 minutes, watching carefully and stirring occasionally. Cool and refrigerate until ready to use. May be made ahead and kept for up to two weeks. Makes: 1 cup
