1/3 cup quinoa flakes 1 cup unsweetene­d

vanilla coconut milk 1/2 medium banana,

sliced

2 tablespoon­s

pomegranat­e seeds

Add quinoa flakes and coconut milk to a 12-ounce microwavab­le mug. Stir well. Heat on high for 2 minutes. Stir again. Top with banana slices and pomegranat­e seeds. Serves 1.

Per serving: 234 calories (percent of calories from fat, 24), 5 grams protein, 40 grams carbohydra­tes, 4 grams fiber, 6 grams fat (4 grams saturated), no cholestero­l, 38 milligrams sodium.
