DER BIERGARTEN’S MEATBALLS

At Der Biergarten, these meatballs are served as an appetizer. It’s an easy recipe to double or even triple. If scaling up, withhold some of the milk until you see if the mixture needs the additional liquid.

Jeff Sime of Legacy Ventures restaurant­s said the meatballs were inspired by a classic recipe, tweaked by one of their chefs. It started out as a special, but customers liked it so much it’s been added to the menu. He finds the meatballs and their creamy sauce go exceptiona­lly well with the classic Spaten Oktoberfes­tbier Ur-Märzen. 1/4 cup medium diced white onion

2 tablespoon­s chopped garlic

1/4 cup plain dry breadcrumb­s

1/4 cup whole milk

1 medium egg, beaten

1/4 cup finely chopped fresh dill

1/4 cup finely chopped fresh parsley plus extra for

garnish

1 teaspoon salt

1/2 teaspoon black pepper

1 pound ground beef

Vegetable oil, for browning meatballs Mushroom-Dill Sauce (see recipe)

In the bowl of a food processor, combine onion and garlic and process until smooth. Move onion/garlic mixture to a large bowl. Stir in breadcrumb­s, milk, egg, dill, parsley, salt and pepper and mix thoroughly. Add ground beef and use your hands to mix together. Be sure to mix lightly and not compact the meat. Divide mixture into nine portions and roll each into a ball. Preheat oven to 350 degrees.

Heat a large skillet over medium-high heat and lightly film with oil. Add meatballs and sear on all sides, making sure not to crowd pan. As meatballs are seared, move them to a rimmed baking sheet. When all meatballs are seared, bake them until their internal temperatur­e is 155 degrees. Serve with Mushroom-Dill Sauce and garnish with chopped parsley. Makes 9 meatballs.
