Henry County wing franchise fails health check
A Henry County location of a regional chicken wing franchise failed a recent health inspection. Zaxby’s in Stockbridge scored 68/U on March 5. Previous scores were 72/C on Feb. 19 and 80/B on Dec. 17, 2018.
According to the report, a flour package stored in dry storage area had been chewed open allowing some product to be exposed. Rat droppings were discovered there and in another storage area.
Other violations:
■ Cold-stored food items were held at temperatures exceeding 41 degrees. Breaded chicken tenders on prep top/counter by the fryer were at 49 degrees, cheese in the reach-in cooler was at 43 degrees.
■ Hot-held foods were at temperatures less than 135 degrees. Chicken wings in an oven were at 119 degrees. Fried chicken patties held under heat lamp were at 112-115 degrees.
■ Wiping cloths stored in sanitizer buckets had concentrations
below the specified code. ■ The inspection report wasn’t posted at the drive-thru window.
■ There were unclean nonfood-contact surfaces throughout facility. There was grease buildup on the back of fryer, food residue on walls and exteriors of in-place equipment, dust/food debris accumulation on storage racks, mold on walls and around pipes in the main kitchen and dry storage areas, mold on shelves in the walk-in cooler and soil buildup on table legs, pipes and walls.
■ There was food residue, splatter, dust and soil accumulations on floors, walls and ceilings throughout facility.
Most restaurants with failed scores are reinspected within 10 days.
