Cucumber dish uses minced garlic for this cold specialty

I cannot seem to find comparable recipes for one of my favorite dishes from Masterpiec­e, their Cucumber with Mashed Garlic. It would be amazing if you could get this recipe so I could make it when I visit my family back north. Thank you. — Lisa Laughlin, Cumming

Chef Rui Liu was happy to share the recipe for Masterpiec­e’s Cucumber with Mashed Garlic, one of almost two dozen offerings on the Cold Dish portion of the menu at both the restaurant’s flagship Duluth location and its new location in Johns Creek.

The restaurant uses minced garlic that comes packed in oil, available in the produce section of the grocery store. The chicken seasoning used at the restaurant is granulated chicken soup base. We suggest trying this with granulated chicken bouillon or using 1/4 teaspoon of the jarred soup base available in the soup aisle of your grocery store.

MASTERPIEC­E’S CUCUMBER WITH MASHED GARLIC

1 pound European cucumber 1 teaspoon minced garlic ½ teaspoon unseasoned rice vinegar ½ teaspoon salt

¼ teaspoon chicken seasoning ¼ teaspoon toasted sesame oil ¼ teaspoon sesame seeds

Trim and discard the ends of the cucumber. Cut the cucumber on the diagonal into 2-inch lengths. Put cut cucumbers in a mixing bowl and add garlic, vinegar, salt, chicken seasoning and sesame oil. Toss. Arrange on serving platter and garnish with sesame seeds. Serve immediatel­y.

Makes 3 cups.

Per 1/4-cup serving: 7 calories (percent of calories from fat, 18), trace protein, 1 gram carbohydra­tes, trace fiber, trace total fat (no saturated fat), no cholestero­l, 81 milligrams sodium.
