During the second half of July (July 16-31), 22 eating establishm­ents were inspected in Catoosa and Walker counties: seven earned a perfect score of 100; 11 earned a score in the 90s (A); three earned a score in the 80s (B); and one earned a score in the 60s (unsatisfac­tory).

Observed several broken and missing floor tiles in kitchen that were holding water. CA: PIC will have floor tiles replaced. (1 pt)

Observed grease buildup on hood vent over grill. CA: PIC will have hood vent cleaned. (1 pt)

Observed employee cell phone lying out on food prep surface. CA: PIC had employee move cell phone to designated area for employee personal items. (1 pt)

Observed live flies around three compartmen­t sink area and trash cans and floor drains. CA: PIC will increase pest control measures for flies. (3 pts)

Inspector’s notes Observed the inside of the ice maker not clean to sight or touch. CA: Ice maker will be thoroughly cleaned and sanitized. (4 pts)

Observed no properly working cold holding units during the inspection. TCS food in both prep top units and the walkin coolers were cold holding above 41 degrees Fahrenheit. Due to not having enough any working cold holding units, the restaurant voluntaril­y closed until the cold holding units can be repaired. The temperatur­e inside the building is over 80 degrees Fahrenheit as well. Observed heavy condensati­on inside walk-in cooler with large amounts of condensati­on water pooling over food containers, shelving and floor. Facility will remain closed until the health authority can verify there are enough functionin­g coolers maintainin­g 41 degrees Fahrenheit or below. Owner will call Catoosa County Environmen­tal health prior to reopening to verify coolers are working properly. CA: All TCS foods cold holding over 41 degrees Fahrenheit will be discarded including raw ground beef, raw pork, milk, sliced tomatoes, and in house cole slaw. See temperatur­e chart below. (9 pts)
