“It’s delicious,” he said of the roast- beef sandwiches that organizers serve for lunch on Monday. “It has its own unique taste.”
The cooking process involves filling a 120- foot- long, 4- foot- wide and 4- foot- deep pit with coal, adding the foilwrapped meat and covering it with sand, sheet metal and a tarp.
This process is completed by 12: 30 a. m. Monday, giving the meat about 11 hours to cook before lunch is served. Pfeil expects to sell about 5,500 sandwiches.
Before the culinary finale, though, guests can enjoy plenty of fun at the festival on Saturday and Sunday, with music, rides, a pageant, eating contests and, on Saturday, a parade.
“It’s a homecoming,” Pfeil said. “People come back to West Jefferson who have lived here in the past.”
