PRETTY-IN-PINK BROWNIES

Makes 24 small squares Adapted from www.cakespy. com.

The original recipe called for Alec’s Awesomely Fudgy Brownie Mix made by Among Friends Baking Mixes: It’s made with oat and brown rice flour. Any brownie mix for a 9-by9-inch pan will work.

Brownies:

1 box favorite brownie mix, made according to package directions Cream-cheese filling:

1 package (8 ounces) reducedfat cream cheese, softened

1 can (14 ounces) reduced-fat sweetened condensed milk 1 teaspoon cornstarch

cup good-quality seedless strawberry or red raspberry jam 1 large egg at room temperatur­e 1 teaspoon vanilla extract Topping:

1 large bar (3.5 ounces) goodqualit­y dark chocolate, coarsely chopped

2 tablespoon­s unsalted butter

Heat the oven to 350 degrees. Generously grease a 9-inch brownie pan. Line with parchment paper or foil if you like leaving an overhang to make it easier to lift the brownies from the pan.

In a medium bowl, mix together all of the brownie ingredient­s according to package directions. Once mixed, spread the mixture evenly in the prepared pan.

To make the filling: In a mixing bowl, cream the cream cheese on medium speed until it’s fluffy. Add the condensed milk, cornstarch, jam, egg and vanilla. For an intense pink color, add a drop or two of food coloring. Pour the cream-cheese mixture on top of the brownie layer.

Place the pan on the lower oven rack and bake for 40 minutes or until set. The top should be mainly pink, but it’s OK if the edges brown a little.

Remove from oven and cool in the pan on wire rack until it reaches room temperatur­e. Cover with plastic wrap and store in the refrigerat­or for at least 30 minutes; overnight is best.

To make the topping: Melt the chocolate and butter in the microwave or in the top of a double boiler. Once mixed and smooth, spread over the brownies and cream-cheese mixture. Be sure to cover the area evenly. Because the brownies were chilled, the topping should set rather quickly.

Once set, slice into squares or rectangles to serve. Store leftovers in the refrigerat­or, but let warm to room temperatur­e to serve.
