Chipotle, Jersey Mike’s could join the menu in Collierville
A Collierville spot that once could have been Whataburger might instead become a Chipotle and Jersey Mike’s Subs.
The Collierville Board of Mayor and Aldermen will vote Monday on a preliminary site plan to add Chipotle and Jersey Mike’s Subs at the 1088 W Poplar Avenue Subdivision, where Whataburger had been planned.
The Texas-based burger joint withdrew its application in January, citing traffic issues in the town.
Now, developers Crews Development want to utilize the 3,725-squarefoot building for two dining options. The site plan shows the Mexican grill in 2,325 square feet and the sandwich shop in 1,400 square feet of the same building.
Developers also plan for a Chipotle mobile-order-only drive-thru where those who placed orders through the app can pick up orders.
Jersey Mike’s will not have a drivethru.
The combined site will have 40 parking spaces and a total of 96 seats — 65 seats inside and 31 seats outside.
A traffic study conducted by Kimleyhorn shows the eateries will increase delays and vehicle queue lengths on Fitness Center Drive and Poplar Avenue.
The planning commission in December also recommended retiming the Poplar Avenue and Market Boulevard traffic light with the final site plan.
If the board approves the preliminary plan, developers will submit a final site plan to the department review team, then construct a development agreement for the mayor and aldermen to approve.
