Cookie dough desserts at Whiskey Tango Foxtrot and Rebel Restaurant

The heart wants what the heart wants, and apparently my heart wants salmonella. I have a major thing for cookie dough (in all its raw egg glory), so when I recently saw not one, but two cookie dough and ice cream desserts on restaurant menus, my heart positively burst with doughy glee.

I’m not talking cookie dough ice cream, here. No, these two lovelies are cookie dough and ice cream, each component separately lauded and fully explored on its own merit, not haphazardl­y blended together into a single blasé ice cream.

My first cookie dough with ice cream dessert was at Whiskey Tango Foxtrot, where I — to put it mildly — freaked the heck out when I saw the Ice Cream Sammy on the menu. Instead of a cookie, or a doughnut, or whatever other cooked baked good you may have seen as the “bread” on an ice cream sandwich, Whiskey Tango Foxtrot uses two pristine slabs of hardened, raw chocolate chip cookie dough to cradle the vanilla ice cream.

Each bite is the perfect ratio of cookie dough to ice cream, an incredibly satisfying ice cream sandwich experience.

Then I saw this resplenden­t combo again, this time at Rebel Restaurant.

Rebel’s dessert features two cooked brown butter shortbread cookies sandwichin­g an entire patty of cookie dough. Let’s say that again: an entire patty of cookie dough.

Accompanyi­ng this beautiful cookie creation is peanut butter swirl ice cream, salted chocolate ganache and whipped cream. The gratificat­ion I got from biting into the chewy dough was almost primal, the very same feeling my ancestors must have had before someone went and ruined everything by putting the dough over fire.
