What do you look for in a good sandwich?
Before I found this sandwich shop, I would have told you I cared about the big picture: How does everything come together, sides and all, to give me the ultimate perfect bite?
But at Parsley, a tiny shop in Denver’s Golden Triangle, the house- made ciabatta is what it’s all about.
Who needs a trendy side of tots for lunch when the memory of the bread alone will end your 10 a. m. brainstorming for what to have for lunch because you already know: that red pepper turkey from Parsley.
The bread is just the foundation for this delicious sub. It’s topped with roasted turkey, provolone, sweet red peppers, red pesto sauce, lettuce, onion and tomato. Perfection!
This shop prides itself on fresh, organic ingredients. And it makes for the perfect stop for a sandwich, salad, soup or juice.
This tiny slice of heaven on Cherokee Row is vegetarian and vegan friendly. ( It even has glutenfree bread options.) So whether you follow my advice and try one of the delicious turkey subs or load up on fresh veggie combos, you won’t be disappointed.
According to its website, Parsley supports local farms and buys from farmers markets. As a bonus, it is big on composting and recycling, too.
