Mediterran­ean Diet Edition: Airfried Chickpeas (or a really cool way to make Hummus!)

Many of you have gleaned from last month’s recipe that Michael and I are embracing more of the Mediterran­ean Diet in our everyday meals. We have found that is a tasty recipe to use in an airfryer or set the oven to 390 degrees and spread them on the cookie sheet and check another box for our lifestyle.

Next you’ll need to figure out your flavor for the chickpeas. I like Chili Lime and Italian Seasonings. Chocolate or a Bizcochito­s flavor are great as a healthy Cookie Butter Hummus too!

I figure out the flavor (sweet or savory) that I want. I use a combinatio­n of spices from recipes I see online to salad dressing packets or premade spice mixes like barbecue rubs.

Open a can of chickpeas or garbanzo beans and drain. Place beans in one layer on the greased cookie sheet. Heat oven or air fryer to 390 degrees

Place the chickpeas in the Air Fryer or oven for five minutes. This will dry the chickpeas and get them Ready to Roast! Spray chickpeas with olive oil — any flavor you like!

After 9 more minutes in the oven, you sprinkle half of the seasoning. Return to air fryer/ oven for 2 minutes. Add the remainder of seasoning when chickpeas are done. Place in a bowl and serve as another healthy snack or add to your charcuteri­e board.

Note: IF you are going to make hummus, skip the last four minutes of Roasting. Add the chickpeas to a food processor, add a great flavored olive oil and blend until smooth! Sprinkle the other half of your seasoning on the top of the hummus and optionally drizzle with more of the olive oil. The possibilit­ies are endless and I am seeing many people making sweet and savory fried chickpeas/hummus!
